If you ask the horse trader about her, he will say he bought Roach from “some odd Polish fellow” who had settled down with a wife. This is a reference to Geralt’s horse Roach in The Witcher 3 (as well as the Witcher novels).
Epona (Legend of Zelda reference)

If you ask the horse trader about her, she will ask if you can play the flute, saying that the horse won’t listen to anything except a pipe or flute. This is a reference to Link’s horse in the Legend of Zelda series, and how Link needs to use Epona’s Song to call her.
