Once you are able to bet in the fights, go to the arena on the far left of you're map. The fight arenas have a betting cap, but the one on the far left does not.

Save the game immediately before talking to the betting guy at the front of the arena. Then, place a bet for the maximum amount of money you have available. If you do not win, just reload your saved game and try again.

Repeat as many times as necessary.

There are 50 total Health Shrines, which boost your health, 11 Jade Statues, which unlock new melee combos (after you turn in each statue), 100 lockboxes, which contain money/weapons/clothing in addition to serving as collectibles, and 26 Spy Cameras that you can hack into. (Keep in mind that the hacking codes are random.)

The cockfighting arena on the far left of the map has no cap on bets. Therefore, you can earn easy money by saving right in front of the arena, betting as much money as possible, and reloading until you win.
