Before a race begins, the screen will fade to black during the countdown. Tap the accelerator button every time the screen fades. One successful tap will give you a Level 1 Boost Start (your exhaust will turn red), two successful taps will give you a Level 2 Boost Start (your exhaust will turn purple), and three successful taps will give you a Level 3 Boost Start (your exhaust will turn blue). However, a miss-tap will reset your Boost to zero.
