To unlock Master difficulty for a song, you must first clear that song on Hard difficulty.
There are hidden/secret versions of certain songs you can unlock. For most of them, you can unlock them by tapping the Master Difficulty button repeatedly until you finally get the song unlocked. The songs with hidden charts that can be unlocked in this fashion are:

To unlock new characters, you need to level up. Every time you level up, you get either a character scrap or an illustration scrap. Once you get 8 character scraps, you will unlock a new character.
Each character has a special ability. This means different characters are more suitable for different situations and playstyles. Check out their abilities and experiment to decide which characters you want to use the most.
In addition to the main characters, elfins also provide you with special boosts. Check out the ability of each elfin to decide which is the best fit.
If you play as Buro, you will earn 50% more exp. This makes Buro the best choice if you’re trying to level up quickly.
However, other characters can improve your accuracy, high score, etc., so it’s important to choose based on what you’re specifically trying to accomplish.
